Comments: I was looking for inspiration what to cook on a cold winter day and ended up on your bigos site. I got my bigos recipe back in 1993, and might as well share it. 1kg cabbage, 1kg sauerkraut, 1kg diced fried pork, 0.5kg sausages, 1 glass of prunes, dried mushrooms. Cook the cabbage and meats for 2h. Throw in the sauerkraut and cook for another 2h. Cook for 1 week. At this point Sofia, who was translating the recipe asked her mother if she's out of her mind; she clarified that you cook it for some hours every day, then put it out in the snow, but it's not worth serving before one week has passed. I seem to be doing something wrong, as usually after cooking the bigos for one week there's nothing left!

Comments: all what you say on your site about bigos is true. after moving away from home, i happened onto a Polish cookbook that had two recipes, neither of which was quite right. so I improvised between the two and came up with something close to Babcia's recipe. great web site.

Comments: I first heard of Bigos by reading a recipe for it in Gourmet magazine about 25 years ago. I clipped the recipe but never made it until about 10 years ago after having the dish for the first time at my niece's wedding rehearsal dinner at Stash's Polish restaurant in Montreal. I have several recipes and combine them as the mood fits but rely most heavily on the one found in Please to the Table, a Russian cookbook by von Bremzen and Welchman. I now live in Ft. Lauderdale Florida where we have a Polish restaurant and deli that sell and serve bigos. Lucky me. My heritage is Swedish but I married a Latvian and for many years we celebrated Christmas with our Latvian relatives by having a hearty dish of bigos. Thanks for sharing your love of bigos. This is a great site.

Comments: Czesc! Hi, i'm Eva from Melbourne Australia and I think your website is fabulous. I am going to a beer tasting night at friends place on Saturday night and offered to make bigos. Eventhough a traditional Polish dish, because of the sauerkraut I thought it combines German flavours and will suit other Germanic dishes that the hosts will be preparing. In search of a recipe, i googled "Bigos" and your website came up. Lucky for me. Who would have thought this existed!
